How it’s done

Just call us, and book in a brewing time. Come in and our enthusiastic staff will run you through the proven recipes (there is a lot) then we will guide you through the detailed instructions, you can’t go wrong!

  1. Choose

Gather a mate or two (or you can keep it all for yourself) come in and consult our beer list (see Beer menu). With over 200 to choose from it takes a little longer than you think, but if you have a favorite brand, from here or overseas, chances are we’ll have something very close to it.

  1. Measure and Make.

Our staff will give you your recipe sheet and be of assistance while you measure out all the ingredients, malts, grains and hops each into their own specific containers. Head over to your designated brew station and participate as your ingredients are added at various times during the brewing process to the kettle, or just kick back and enjoy a sample. At the completion of the brewing process (approx 1 hour) your “WORT” is transferred from the kettle to the fermenter via a hop filter and heat exchanger. The temperature is now right for you to add the yeast and then your brew is taken to the temperature controlled fermenting room. On your way out, book in for your bottling date in two to four weeks time (depending on which type of beer)                        Don’t worry- it’s easy.

  1. Fermentation

Our qualified staff always makes sure your beer is kept at the correct temperature and is perfect every time. This is crucial to the production of a quality beer. After the fermentation is complete, usually around 10 days, your beer is placed in the cold room and allowed to settle and mature, awaiting your return. We then filter and carbonate your brew ready for you when you return.    Most lighter – coloured beers are ready in two weeks, most premium beers take three weeks and and high alcohol beers take around four weeks.

  1. Bottling or Kegging Day

At your appointed time, return to Red Bay Brewery where your beer is already chilled, cold triple filtered, carbonated and waiting for you ready to drink opps,.. I mean bottle, Bring in your own bottles and place them on the bottle washer (sanitizer) and rinse so they are ready to use.      Now the best part, simply use your individual bottling station and fill you bottles with your own premium Red Bay brew.

We can supply bottles if needed (50c each). Twist tops and tallies are OK too!                     Bottles must be relatively clean (no visible nasties inside) but not sterile – we’ll sterilse them.  Two people can bottle a batch in approx 45 minutes. If you have a keg, we’ll fill it for you.

Remember the more you accidently spill… I mean drink the less you have to bottle!

Each brew makes approx, 50Litres of beer (133 x 375ml) (151x 330ml) or (145 x345ml) bottles

We strongly recommend that to avoid any spoilage, your beer should be refrigerated as soon as you get it home.

  1. Drinking.

Funnily enough, Red Bay Brewery has now established that not a lot of help is needed in this area of the Micro-brewing experience. But we are more than happy to help all of our valued customers, should you require assistance in any way.    CHEERS..

Cleaning bottles

Sometimes, after a few uses, your bottles can end up with a cloudy film inside them (it’s easier to see in the clear ones), even if you’re rinsing them straight away and looking after them properly. It won’t kill you, but it can make it a little difficult to bottle your beer.

The only way around it is to get stuck in with a bottle brush, (we sell them here for $5).

If all that sounds a bit too hard then just keep an eye on the old ones and replace them with some fresh ones as you need them.
